Brewing beer - from waste to taste

It's no secret that we have an issue with food waste in Aotearoa. 15,000 tonnes of bread, 12,000 tonnes of leftovers and 5,000 tonnes of potatoes go in the bin every year. Otago University's Food Waste Innovation project is working on ways to actively reduce food waste and repurpose things that people don't want to eat.

One of their researchers is Dr Graham Eyres. He's a specialist beer scientist who's turning his eye to replacing malted barley in beer production with discarded bread. He's also a keen home brewer and for the last ten years has been working as a registered craft beer judge. He's been busy recently judging the beers for the Dunedin Craft Beer & Food Festival!
