The general manager of Reef Group Limited says two of its new processing plants on Niue should double their employment within the next year.
Kim Gordon says there are 40 people currently employed at the fish processing and noni plants, which officially opened at the weekend.
She says noni has already been processed and there is expected to be fish at the plant within the next two to three weeks.
Ms Gordon says they will then be exporting the goods.
"Fresh fruit and vegetables, and fish will be coming out by air freight. And, Chathams Air are going to put in a Convair to allow us additional freight capacity between Niue and Fiji, so we'll be having 18 tons of air freight as a minimum going out each week. Anything else will come out by ship."
